Strawberry Jam

  • 4 1/2 cups (1.5 L) crushed Boonstra berries (about 2 quarts/2L of fully ripe strawberries)
  • 1 box CERTO fruit pectin crystals
  • 7 cups (1.75 L) sugar

Cooking time: 15 minutes

Measure 4 1/2 cups (1.25 L) Boonstra berries into a large saucepan. Mix fruit pectin crystals with prepared fruit. Measure sugar and set aside. Place saucepan over high heat and stir until mixture comes to a full rolling boil, stirring constantly. Stir in sugar. Continue to cook and stir over high heat until mixture comes to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Stir and skim foam for 5 minutes to prevent floating fruit. Pour quickly into warm, sterilized jars filling up to 1/4-inch (6-mm) from rim. Seal while hot with sterilized 2-piece lids with new centres.

Makes 6cups (1.5 L).
