Strawberry Jam
- 1 3/4 cups (425 mL) prepared fruit (about 1 quart/1L fully
ripe Boonstra berries)
- 4 cups (1 L) sugar
- 1 pouch CERTO liquid pectin
- 2 tablespoons (25 mL) lemon juice
Method:
Prep time: 15 minutes
Stem and thoroughly crush Boonstra berries, one layer at
a time. Measure 1 3/4 cups (425 mL) prepared fruit into a
large bowl. Add sugar to fruit and mix well. Let stand 10
minutes. Stir in liquid fruit pectin and lemon juice. Continue
to stir for 3 minutes until most of the sugar is dissolved.
Pour into clean jars or plastic containers. Cover with tight
lids and let stand at room temperature until set (may take
24 hours). Store in freezer. If used within 3 weeks, jam may
be stored in refrigerator.
Makes 5 cups (1.25 L).
Creative Variations:
Minted Strawberry - Add 1 tablespoon (15 mL) chopped
mint leaves.
Sunny Strawberry - Add 1 tablespoon (15 mL) grated
orange or lemon rind.
Nutty Strawberry - Add 1/4 cup (50 mL) slivered almonds
or chopped pecans.
Tipsy Strawberry - Add 2 tablespoons (25 mL) fruit
liqueur or brandy.
Lime Strawberry - Substitute lime juice for lemon juice.
